How are you going to use it? What kind of box will you be using?
Need more info.

I have experience with the 1000W PE plate, the older 250W plates, and this weekend will be playing with the component-style 1000W amp and probably a few other plate amps.
For that alignment, I personally would go with something like the 1000W plate or shelf unit from PE, or maybe the 1300W plate from Elemental Designs. Headroom is good. Clipping is bad.
If you go significantly higher than what you have (say 1000W) I would definitely look into some kind of highpass rumble filter. 1000W below tuning can get expensive fast.

If it were mine, and I wanted to get the most for my money (which is often the case), right now I'd probably buy a PAIR of BASH amps since they're currently on sale, and use one to feed each coil.
2 300s would be $218 for about a 3-4dB gain over what you're running now.
2 500s would be $318 and would give you a gain of around +5 to +6dB.
It's not too hard to alter the factory "boost" on these amps, and they come with only a very mild "lift". It looks like your box gives you almost a dB of boost around 50-60 Hz, so I wouldn't want to accentuate that any more. I'd probably go for 1-2dB of boost at 30 Hz if possible.

Without looking, I think that's the Dayton 15" DVC. Mighty efficient sub, that. I don't think there'd be any need to go beyond 500W. My advice would be the 500W BASH. The price / performance is there, and it has a 19Hz rumble. With his vented alignment, it should dovetail nicely with the DVC's excursion capabilities.
Just don't bottom that sub. IIRC, while it DOES have gobs of linear Xmax, it DOESN'T have a bumped back plate. Damage will occur if you get too far past Xmax, which could happen above OR below the box tuning. More likely above, believe it or not. Content from 35-40hz will be more dangerous.
