    Default OT salsa recipe.

1 Gallon of peeled and chopped tomato's
1lb of peeled and chopped onions
    16oz of tomato paste
    1/3c. garlic salt.
    2Table spoon cilantro minced fine.
    10 large jalapeno's chopped.
3 large green bell peppers chopped.

Mix together and simmer for an hour or so till cooked tender.
Put in mason jars "quart size works best".
Boil jars full of salsa for 25 minutes.
While they are boiling place lids and lid rings on loosely.
After 25 minutes cut off heat and tighten rings
Allow to cool for 2 hours lids should seal during this time.
Makes 5 quarts to store and a big bowl to enjoy.

    No Lime juice?

Usually when canning tomatoes, you want some acid to keep the PH down.

That's where 99% of the heat in the pepper is.
If you can't take the heat get out of the kitchen. Just messing with you.
You can if you like a milder salsa. Me likey HOT!!
My 2nd batch was tweaked last night added 2 habanero's to the mix. Can you say ******** leakage.
