What's the most hillbilly song you use for testing
I mean come on. Let'er rip. You have to listen to all genres of music and there is nothing like some good old hillbilly music to see if the speaks got the groove for that type of music. One of my favorites is:
C C R - Cotton Fields

Duelling Banjos has got to be my favorite. And since it brings up memories from watching Deliverance, it ranks up there on top of the hillbilly scale.

Hank III!! That stuff is just rotten, bad recorded, and hands down the most redneck hellraisin' sh*t out there. Gotta love the williams family! His punk/indutrial metal stuff is okay also.

Will the Circle Be Unbroken
The title track song from the Circle 2. As a studio recording I think that it's hard to match, both in performance and quality. Acoustic instruments only, wide variety of vocalists, best musicians of the genre (and not just a couple of them).
It starts with the piano intro by Bruce Hornsby (rather atypical), but it tests the low end briefly and the body and weight, even before any vocalists start up.
Next it has the vocal intro by Johnny Cash that is a real test of the mid and upper bass of a system. Other vocalists add flavor and variety, but Cash is without doubt the best presence.
It also gives you a bit of studio background chatter that fades into a brief a cappela intro that fades out and leads to Hornsby's piano intro. Both albums are a lot more intimate in that regard that most.
I also frequently use Alison Krauss. Her voice is a test of the lower treble. My favorite for this one is on her "Collection" album (don't know the original) "Oh, Atlanta".
Polished, but almost 20 years old is The Seldom Scene, "A Change of Scenery". Several cuts from this are good, especially a couple with great a capella finishes. They harmonise well.

I have over 130 country cd's, so I'm never at a loss for hillbilly test music. 
By far the highest quality recording of the bunch is my AKUS live SACD that's already been mentioned, but I've found that there's plenty of other good sounding country music.
I like a lot of George Strait's stuff. I listen to his "Live at the Astrodome" cd often.
"Common Thread: Songs of the Eagles" is a great disk. There are a few well recorded songs on that disk.
Anything from Alan Jackson or Le-ann Womack usually sounds good.
I've found that an awful lot of the country cds are HDCD disks. It seems like most of the HDCD disks that I come across are from country artists. A lot of my HDCD encoded country disks sound very good.
And then there's always the Eagles, though I really wouldn't call them hillbilly music even though they have a country-ish sound. I listen to anything and everything from the Eagles and I love it all.

The Seldom Scene - Baptizin'
Some of that acoustic hillbilly music is well recorded and has a real nice ambience that can be rendered very realistically with a good sound system.

Doc Watson - Southbound
That's overall his best. And with his grandson, "Third Generation Blues" is his most Hi-Fi recording. "Elementary Doc Watson" is a personal favorite.
