ROTW redux

3 hours in, maybe 2 to go. Yesterday my wife showed up from shopping with a nice big pork picnic (might be shoulder where you are) so I scored the skin criss-cross and rubbed with roasted garlic puree and salt and pepper and took off for the drag races. (So how many watts is a 600 cubic inch pro-mod? Standing with the starter it was a real pacemaker experience.) About 10 this AM I started the smoker going, Kingsford, a little wet hickory and mesquite in the fire chamber and the picnic on the grate. Right about now the pig is burgundy color, the skin is starting to curl and crackle and it smells even better than the mix of nitrous, VHT, and rubber I wore home. Maybe add a slaw with red bell and fresh cabbage in a curry, lime and sour cream dressing. Wash it down with a Wink soda. Hope you are havin' a good one too.

Man! you know how to eat. The slaw you propose sounds better than the dill concoction on the top of my list.
