... I decided to paint first. I ended up with a few scratches and nicks in the paint from the veneering process. That is my fault, I should have masked off the paint entirely once it was dry...
Not sure there's a right or wrong order there. Veneer first and you may have dented the veneer. The one thing that has helped my finishing of pieces is the use of old blankets and towels to wrap the pieces in so they don't get those little dents and marks before final to coating. Of course then when it's finished and your toddler "fixes" it for you with his play hammer...
You could also bring your satin closer to flat with a micro abrasive (fine steel wool, 3M pad, wet sand etc.). In my experience that will lead to more to coats...
